Heaven in a Tortilla

While living in a colorful house south of BYU campus that looked like Willy Wonka and all his Oompa Loopmas blew up in it, I learned something from my dearest friend Rebekah. I learned that at Costco they sold tortillas. 

They were the  best tortilla's I'd ever had in my life. Which is saying something. You see, I was raised by parents who take Mexican food seriously. So seriously, that my mother would drive us across town to a little Mexican Market that was housed in an old Bungalow with a snowy-shack tacked on the front porch. We would run inside and buy a bag of warm delicious tortillas. Now, that was fresh. Mom knew what time to go to get the warm ones. But what if there weren't any warm ones? We would squeeze the bags until we found a squishy fresh one and we'd buy that. 

But Bekah's Costco tortillas were better than fresh. They were raw. You cooked them yourself and within 30 seconds had in your hands a warm, delicious, fresh tortilla without driving across town and pretending to speak fluent Spanish. Genius.

Then today I learned something. In addition to being delightful  in the form of tacos, burritos, quesadillas, chimichangas, and fajitas (I have yet to try them for enchiladas), they make the world's finest dessert.

All you do is, head up your griddle, cook one side of the tortilla, flip, sprinkle chocolate chips on it, wait for them to melt, fold the tortilla in half, and try not to faint when you taste how heavenly that warm chocolaty tortilla is. It's that good.

Okay, go to Costco! Or I guess you can just come over here and I'll make you one myself. You've got to try this!
